
Smoked Salmon Topped Buckwheat Blinis

2 eggs

100g buckwheat flour

75g plain flour

½ tsp bicarbonate of soda

300ml Alpro soya alternative to milk

1 tbsp oil

smoked salmon

5 tbsp Alpro soya Organic alternative to yogurt - Plain

1 tbsp lumpfish caviar

1 x 15g pack fresh dill
Whisk the eggs until frothy.
Stir in the flours and bicarbonate of soda.
Add the Alpro soya alternative to milk, beating well to keep a smooth batter.
Heat a little oil in a frying pan and drop in a dessertspoonful of batter for each pancake, leaving plenty of space between the blinis, as they spread a little as they cook.
Cook for a minute until nicely brown, flip and cook for a further minute or until golden brown. You will need to do this in a number of batches.
When ready to serve, fold the smoked salmon and place on the blinis, top with a teaspoon of Alpro soya Organic alternative to yogurt - Plain, a small pile of caviar and a garnish of dill.
