Ingredients

  • 150ml Alpro soya dairy free alternative to fresh milk
  • 150 ml Alpro soya dairy free alternative to single cream
  • 4 large leeks, cleaned and finely chopped
  • 1 large white onion, finely chopped
  • 100g peeled and chopped potato
  • 60g margarine (polyunsaturated) or olive oil
  • 250ml vegetable stock
  • salt and pepper
  • handful of flat-leaved parsley

Preparation

Sweat the onion in the margarine or oil for a good 5-10 min. at a very low heat until soft and translucent. Add the leeks, toss well, season and sweat for another 10 min. Add the potato and pour over the stock. Simmer for about 20 min. or until the potato is soft. Add the Alpro soya dairy free milk alternative and liquidize. Add the Alpro soya dairy free alternative to single cream (saving a little for serving) gradually,
until you have the desired consistency. Chill well. Serve with a little Alpro soya dairy free alternative to single cream on top and the parsley. In winter, serve hot as a delicious leek and potato soup by adding extra potatoes for a thicker, heartier consistency, and a swirl of pumpkin seed oil.
