
Carrot & orange soup

3 cardamom seeds, crushed

550g carrots, sliced

550ml Alpro soya Dairy Free Alternative to Milk

salt and pepper

1 onion, chopped

300ml vegetable stock

1 bayleaf, split

10ml grated orange rind
Heat cardamom seeds in a non-stick pan over a medium heat for 3 minutes. Add onion, carrots and stock, reduce heat, cover pan, cook gently for 10 minutes. Stir in Alpro soya Dairy Free Alternative to Milk and orange rind and continue to simmer for a further 20 minutes until carrots are tender. Remove bayleaf and puree the soup. Season and re-heat soup.
