
Watercress soup

1 small onion

2 large bunches of watercress

250g new potatoes

250ml Alpro soya dairy free alternative to single cream

400ml vegetable stock

1 tbsp olive oil or margarine (polyunsaturated)
Finely chop and fry the onion in olive oil or margarine until soft. Add the peeled and chopped potatoes and cook for 2 min. Add watercress, pour on boiling stock, bring back to the boil and then simmer for 15 to 20 min. until potatoes are cooked. Blend adding Alpro soya dairy free alternative to single cream and save 1 tbsp for serving. Check seasoning and serve with a swirl of Alpro soya dairy free alternative to single cream to finish.
