Mushroom and cheese starter

Ingredients

  • 1 tablespoon cooking oil
  • 1 garlic clove, crushed
  • salt and pepper
  • 2 teaspoons dijon mustard
  • 1 onion, chopped
  • 225g (8oz) mushrooms - thickly sliced
  • 50g (2oz) vegetarian or cheddar cheese
  • parsley
  • 1/2 pint Alpro soya sauce:
  • 25g (1/2 oz) margarine
  • 275ml (1/2 pint) Alpro soya dairy free alternative to milk
  • 25g (1/2 oz) flour
  • salt and pepper

Preparation

Alpro soya sauce:

1. Melt margarine and flour.

2. Take off heat and gradually add Alpro soya dairy free alternative to milk and seasoning.

3. Return to heat and bring to boil stirring all the time.

4. Serve with pasta or lightly boiled vegetables.

1. Heat oil and fry onion, garlic and mushrooms until tender.

2. Divide mixture between 4 ramekin or individual ovenproof dishes.

3. Season Alpro soya sauce and add mustard and half the cheese.

4. Pour over mushroom mixture and sprinkle with remaining cheese.

5. Bake at 190°C (Gas 5) for 15 minutes, or brown under a hot grill.

6. Serve hot garnished with parsley.
