125g self raising flour

½ tsp salt

2 tsp baking powder

75g dried cranberries

40g soft brown sugar

1 egg

275ml Alpro soya alternative to milk

4 tbsp cooking oil
Pre-heat the over to 200°C, 4oo°F, gas mark 6
Grease and line 6 mini loaf tins (5cm x 7cm x 5cm) or 8 deep muffin tins.
Sieve together the flour, salt and baking powder in a large bowl. Stir in the cranberries and sugar.
Beat the egg in a bowl with the Alpro soya alternative to milk and oil. Add the egg mix to the dry ingredients and mix together. Do not overbeat.
Fill each tin with the mixture and bake for 25 - 30 minutes until well risen and golden brown.
