
Walnut bread

250ml Alpro soya Dairy Free Alternative to Milk(room temperature)

1 (organic) egg

3 (organic) egg yolks

30g soft brown sugar

20g fresh yeast

300g white plain flour

250g walnuts, halved

grated peel of 1 (organic) orange

75g sultanas or raisins

1 teaspoon salt
Preheat the oven to 210°C. Line a loaf tin with non-stick baking parchment. Soak the sultanas in a little water for 30 minutes. Mix the Alpro soya Dairy Free Alternative to Milk, eggs, sugar and yeast in a large bowl. Let the mixture rest for 10 to 15 minutes in a warm room Sieve the flour into the yeast mixture and mix together well, e.g. in a food processor.
Then add the peel, walnuts, salt and drained sultanas. Mix thoroughly once more and pour into the baking tin. Cover with a clean tea towel and let prove in a warm room for 45 to 50 minutes.
When the dough has just about risen to the top of the tin, you can put it in the oven.
Lower the temperature after 10 minutes to 175°C and continue to bake for another 30 to 35 minutes. Watch out that the top of the loaf does not get too brown. If this is the case, just put some foil loosely over the tin. Prick the bread with a knife or fork to check whether it is done. If the knife or fork comes out without any dough sticking to it, the loaf is done. Let it cool down in the tin until it comes out easily. Don't cut it until it has completely cooled down.
