Hot lemon pudding

Ingredients

  • 250ml Alpro soya dairy free alternative to milk
  • 100g Caster Sugar
  • 2 tbsp Margarine (polyunsaturated)
  • 2 tbsp Lemon Juice
  • 2 tsp Lemon Rind
  • 2 Eggs
  • 2 tbsp Plain Flour
  • Alpro soya dairy free alternative to single Cream to serve

Preparation

Pre-heat oven to 180ºC. Put on kettle. Cream margarine and sugar. Beat in egg yolks, lemon juice and lemon rind. Fold in flour and the Alpro soya milk alternative. Whisk egg whites until stiff. Fold in. Divide into ramekins which have been well oiled. Put into oven dish and ensure that there is a good inch of boiling water around the ramekins. These will take about 20 mins to be cooked on the top and gooey in the middle. Serve with Alpro soya cream alternative.
