Lemon and ginger muffins

Ingredients

  • 150 ml Alpro soya dairy free alternative to plain yogurt
  • 4 tbsp Margarine (polyunsaturated)
  • 8 tbsp of Golden Granulated Sugar
  • 1 tbsp Demerara Sugar
  • 2 Eggs
  • 80g peeled Ginger
  • Grated peel of 2 Lemons
  • 200g Plain Flour
  • 1/2 tsp Bicarbona

Preparation

Cream the margarine and granulated sugar. Beat in egg. Stir in the Alpro soya Yogurt alternative. Grate half the ginger, finely chopping the rest. Add along with lemon rind. Sift flour, salt and bicarb and fold in carefully. Put into muffin cases. You will get about 8. Top with demerara sugar. Bake for 20 mins at 180ºC.
