Raspberry Tofu brûlée

  • 350g approx Fresh Raspberries
  • 1 tub (500g) Alpro soya dairy free alternative to yogurt
  • 250g Tofu, roughly chopped
  • 75g Icing Sugar, sieved
  • 1 tsp best quality Vanilla Essence
  • 4 tbsp approx Demerera Sugar for caramel

Preparation

Using Alpro soya Plain Dairy Free Alternative to Yogurt and tofu, this deliciously creamy but low fat dessert has a contrast of textures and flavours. The sharpness of the raspberries complements the sweet creamy custard and the crunchy bitter caramel topping.

1. Place raspberries in the bottom of a medium sized ovenproof dish.

2. Place remaining ingredients into a food processor or liquidiser and process briefly until smooth.

3. Pour custard onto the raspberries. Cover and chill until required. Just before serving sprinkle with the demerera sugar to evenly cover.

4. Place under a pre-heated hot grill and cook briefly until the sugar is bubbling.

5. Serve immediately.
