75g Pudding Rice

750ml (3/4 carton) Alpro soya dairy free alternative to milk

1 carton (250ml) Alpro soya dairy free alternative to single cream

50g Caster Sugar

Small handful of Raisins

Good half tsp Ground Nutmeg

2 tsp Margarine
Long slow cooking produces a really creamy rice pudding using Alpro soya Dairy Free Alternative to Milk and Alpro soya (soya Dream) Dairy Free Alternative to Cream. For a lower fat version replace Alpro (soya Dream) Dairy Free Alternative to Cream with more Alpro soya Dairy Free Alternative to Milk.
1. Place all the ingredients together in a medium sized ovenproof dish. 2. Cook for 30 minutes, stir and return to the oven until the rice pudding has absorbed most of the liquid and the top is golden brown. 3. Leave for 15 minutes before serving. Great to serve with a sharp plum, blackcurrant or rhubarb fruit compote.
- For gluten/wheat-free option use wheat/gluten-free pepper and nutmeg.
