
Stir Fry with Shiitake Mushrooms

125g egg noodles 7
5g broccoli florets (broken into small florets)
1 spring onion
50g shiitake mushrooms
3 tbsp oil
1 pack Alpro soya Tofu pieces (lightly seasoned)
3 tbsp oyster sauce
4 tbsp sweet chilli sauce
Cook the noodles according the instructions on the pack.
In a pan of boiling water, cook the broccoli florets al dente (about 2 minutes), then drain.
Finely slice the spring onion, and remove and discard the stalks from the shiitakes, then slice the shiitakes.
Heat the oil in the wok and stir-fry the spring onion with the shiitakes. Add the broccoli to the wok, along with the Alpro soya Tofu Pieces and stir-fry until crispy.
Add the oyster sauce, the sweet chilli sauce and the noodles, and mix thoroughly.
