
Kashmiri Mini Koftas

4 (makes 12 as a starter)

250g (9oz) minced lamb

1 large clove garlic, skinned and crushed

1 cm (half inch) fresh ginger root, peeled and grated

1 tsp ground cumin
-
2 tsp ground coriander
-
2 shallots, skinned and finely chopped

1 tbsp fresh coriander chopped

1 tbsp Alpro soya alternative to yogurt (plain)
Cucumber Raita

4 cms (1.5 inches) cucumber, grated

3 tbsp Alpro soya alternative to yogurt (plain)

1 tbsp chopped mint
Place all the ingredients apart from the Alpro soya alternative to yogurt into a large bowl, mix together with a fork.
Add the Alpro soya alternative to yogurt (plain) and bind together.
Tip the mixture out onto a chopping board and divide into 12 ovals. Fry the koftas in a non stick frying pan for 10 minutes, tossing around the pan to cook all sides.
Combine all the raita ingredients together.
Serva koftas with warm pitta bread and the cucumber raita.
