
Fish casserole with vegetables

300g small organic new potatoes

30g butter or margarine

20g flour

500 ml Alpro soya dairy free alternative to milk (Natural)

1 organic kohlrabi (approx. 150g)

4 organic carrots

100g sugar peas

2 egg yolks

4 cod fillets (approx. 80g each)
Scrub the potatoes and boil them for about 15 minutes. Melt the butter or margarine in a saucepan. Add the flour and brown, stirring all the time, for about 5 minutes. Stir in the Alpro soya dairy free alternative to milk and simmer for about 10 minutes, stirring occasionally.
Season to taste with pepper and salt. In the meantime cut the kohlrabi into small strips. Scrape the carrots and cut into small pieces. Prepare the sugar peas for the pan. Cook the kohlrabi and carrots for about 6 minutes in a little salted water Add the sugar peas after 3 minutes.
Drain the vegetables. Mix the egg yolk with 3 tablespoons of the sauce and stir into the sauce, which must be off the boil. Drain the potatoes and cut them in half. Season the cod fillets with pepper and salt. Place the cod fillets, the vegetables and the potatoes in layers in one large or two small ovenproof dishes and pour the sauce over it. Cook the casserole in a preheated oven on 225°C for about 12-15 minutes.
