
Penne with red and white sauce

500g Penne

1/2 Red Onion

100g Roasted Red Peppers (available ready prepared in jars)

1 tin Cherry Tomatoes

2-3 tbsp Olive Oil

3 Cloves of Garlic

400ml Alpro soya dairy free alternative to milk

25g Margarine (polyunsaturated)

25g Plain Flour

Fresh Nutmeg

1 Bayleaf

Handful fresh Basil
Make the red sauce by chopping and frying the onion in 2 tbsp of olive oil for 2 mins. Add garlic and fry for a further minute. Add peppers and tomatoes, season and then simmer for 20 mins. Blend. Make the white sauce by combining the Alpro soya milk alternative, margarine, flour and bayleaf in a saucepan, bring to the boil stirring constantly
with a whisk and once thick season well adding a pinch of grated nutmeg. To serve, cook pasta, stir in both sauces and garnish with basil and a drizzle of oil.
