
Roast Mediterranean vegetables

1 (500g) tub of Alpro soya dairy free alternative to yogurt
2 Eggs (optional)
1 tsp Paprika
2 small Aubergines
1 large Fennel
2 Red or Yellow Peppers
6-8 cloves Garlic
2 Red Onions
3-4 tbsp Olive Oil
Slice aubergines, place in colander, toss with a dessertspoon of salt and leave for an hour. Rinse and dry. Pre-heat oven to 200ºC. Chop remaining vegetables, place in roasting tin with garlic (leave whole and unskinned) and pour over oil. Season well. Roast for about 45 mins. I usually ensure that the aubergines are on top, so that they are properly cooked. Beat the eggs into the Alpro soya yogurt alternative. Spoon over the vegetables, sprinkle with paprika and bake for about 15 mins at 180ºC. This is delicious served with couscous and pitta bread.
