Leek and broccoli macaroni with a mustard Alpro soya Béchamel

  • Mustard
  • Alpro soya dairy free alternative to yogurt
  • Bechamel:
  • 300ml Infused Alpro soya dairy free alternative to milk
  • 75g margarine
  • 50g plain Flour
  • 1/2 pot (250g) Alpro soya dairy free alternative to yogurt
  • 2-3 tsp Dijon mustard

Preparation

A rich Béchamel Sauce made with Alpro soya Dairy Free Alternative to Milk and Alpro soya Plain Dairy Free Alternative to Yoghurt is used in this hot pasta dish. Use a Dijon mustard to add flavour but not heat to the sauce. For vegetarians omit the diced bacon topping and replace with a few finely chopped walnuts.

1. Prepare Mustard Béchamel following Alpro soya Béchamel Sauce method by combining the Infused Alpro soya Liquid and Alpro soya Plain Yogurt alternative together for the liquid. Add Dijon mustard and seasonings.
2. Simmer vegetables until just tender (3-4 minutes). Add 3-4 tbsp of the vegetable stock to the sauce to give a thick coating consistency. Stir in the drained vegetables and cooked pasta.
3.Transfer to an ovenproof dish. Top with the herb/breadcrumb mixture and diced bacon or walnuts.
4. Cook under a medium temperature grill until the bacon is cooked and the topping is golden brown.
5. Serve with grilled tomatoes and fresh watercress.

- For vegetarian option omit bacon.
- For gluten/wheat-free option use wheat/gluten-free flour, breadcrumbs, pasta and pepper.
