1 medium Red Onion, cut into strips

2 cloves of Garlic, crushed

2 tbsp Olive Oil

500g approx Chestnut Mushrooms, halved or mixed mushrooms

1 pot(500g) Alpro soya dairy free alternative to yogurt

1 tbsp creamed Horseradish

Alpro soya Plain Dairy Free Alternative to Yogurt is used in this dish to give the classic sour yogurt flavour. Choose chestnut mushrooms for flavour or use a mixed selection of mushrooms for variety. Serve Stroganoff on a bed of brown rice with some watercress garnish or alternatively pour over a baked potato.
1. Gently sweat the onion and garlic in the olive oil over a gentle heat for 10 minutes until soft but not browned. Add the mushrooms and continue sweating for a further 10 minutes until the mushrooms are just soft.
2. Stir in the Alpro soya Yogurt alternative and seasonings. Bring to a gentle simmer and serve.
- For gluten/wheat-free option use wheat/gluten-free pepper.
