Tikka strips with Alpro soya mint raita (or dip)

Ingredients

  • 3-4 skinless Chicken Breasts or
  • 4-6 Quorn fillets
  • 1/2 pot (250g) Alpro soya dairy free alternative to yogurt
  • Small finger length piece of fresh root Ginger, peeled and finely chopped or grated
  • 3 tsp ground Coriander
  • 2 tbsp Sun-dried Tomato Paste
  • 1 tsp (adjust according to taste) Chilli Powder
  • 1x15ml tbsp Olive Oil
  • Yofu mint raita: 1/2 pot (250g)
  • Alpro soya dairy free alternative to yogurt
  • 2x5 ml tsp Mint Sauce
  • To serve: Fresh Pineapple pieces, Lime quarters

Preparation

Strips of chicken or Quorn marinated in a gently spiced Alpro soya Yogurt alternative mix. Leave for at least 4 hours to allow flavours to develop. Thread strips onto mini skewers mixed with fresh pineapple and grill. Served with a very quick and easy minty raita dip made using Alpro soya Plain (Yofu) Dairy Free Alternative to Yogurt.

1. Cut chicken or Quorn fillets into strips and place in a shallow bowl with the combined marinade ingredients. Cover and chill for at least 4 hours.
2.Thread prepared strips onto wooden skewers along with fresh pineapple pieces.
3. Cook under a hot grill for 12-15 minutes turning frequently to evenly brown.
4. Mix raita ingredients together and serve with the tikka strips and lime wedges.

- For vegetarian option use QuornT.
- For gluten/wheat-free option use gluten/wheat-free spices.
