
Moussaka with Alpro soya Tofu Mince

1 Aubergine
1 large onion
2 tbsp olive oil
180g pack Alpro soya Tofu Mince
1 garlic clove
1 tsp oregano
1tsp cinnamon
500g Tomato sauce
75g grated cheese
4 large potatoes
salt and pepper to taste
Preheat the over to 175degC / 325degF / Gas mark 4
Peal the potatoes, slice and boil them for 10 minutes.
Cut the aubergine into slices approx 5mm thick.
Cut the onion into fine rings. Heat the oil in a frying pan and add the aubergine. Fry until lightly browned.
Remove the aubergine and lightly sprinkle with the salt and pepper. Fry the onion with the Alpro soya Tofu Mince in the remaining oil. Squeeze the garlic and add to the pan, along with the oregano and cinnamon.
Grease a baking dish with oil.
Place the onion rings and Alpro soya Tofu Mince at the bottom of the dish, then a layer of potatoes.
Then lay the aubergine slices on top and pour over the tomato sauce. Sprinkle the grated cheese on top.
Place the dish in the middle of the oven and cook for about 15 minutes until golden brown and heated through.
Serve with a salad of your choice.
The aubergine can be replaced with courgette.
