
Tasty Tofu Vegetable Curry

200g basmati rice
100g green beans
100g mushrooms
100g carrots
200g cauliflower florets
1 pack Alpro soya Tofu Pieces (lightly seasoned)
2 tbsp sunflower oil
Half tbsp curry powder
salt and cayenne pepper
100ml water
150g Alpro soya Organic Plain alternative to yogurt
Cook the rice according to the instructions on the packaging.
Slice the green beans, quarter the mushrooms and slice the carrots.
Heat the oil in the wok and stif-fry the Alpro soya Tofu Pieces with the curry powder for 1 minutes.
Add the vegetables and cook for a further 2 minutes. Pour in the water, keep stirring until the water is evaporated.
Season to taste with salt and cayenne pepper, add the yogurt into the mixture at the last moment and serve immediately with the rice.
For a lighter version, just reduce the amount of the yogurt to 100g.
