1 each of onion, peeled and quartered,

carrot and celery stick, roughly chopped,

bayleaf 6-12 whole black peppercorns,

4-5 sprigs parsley,

600ml Alpro soya dairy free alternative to milk.

Sauce:
-
600ml infused strained Alpro soya dairy free alternative to milk,
-
75g dairy free margarine,
-
50g plain flour,
-
ground black pepper to taste.
Infused Alpro soya dairy free alternative to milk:
Place ingredients together in a large jug or bowl. Bring to a gentle simmer in the microwave. Cover and set aside for 30 minutes to allow the flavours to infuse. Strain liquid.
Sauce:
Use a solid based saucepan for actually making the sauce. Heat sauce very gently, stirring constantly to prevent Alpro soya dairy free alternative to milk from burning on the bottom of the pan. Melt the dairy free margarine in a solid based medium sized pan. Stir in the flour using a wooden spoon to make a smooth paste. Gradually blend the infused Alpro soya dairy free alternative to milk stirring constantly until the sauce comes to a gentle simmer. Cook for 2-3 minutes. Season to taste adding extra ingredients as specified in each recipe.
