
Cheese sauce

for 300 ml:

15-20 g butter or margarine
-
2X15 ml spoons (2 tablespoons) plain flour

300 ml Alpro soya dairy free alternative to milk

salt, pepper and mustard

75 g (3oz) well flavoured grated cheese
Gently melt the butter or margarine in a small saucepan. Stir in the flour using a wooden spoon then cook over a low heat for 2-3 minutes, still stirring. Remove the pan from the heat and gradually stir in the Alpro soya dairy free alternative to milk, keeping the liquid smooth.
Return the pan to the heat and bring to the boil, stirring. Lower the heat and simmer gently for about 3-5 minutes. Season to taste with salt and pepper and a little mustard. Add the cheese, immediately before adding the seasonings. Serve with white fish, eggs, cauliflower, leeks, potatoes, macaroni.
